Ingredients: 250g pkt. Marie biscuits 120g melted butter 250g cream cheese 400g can sweetened condensed milk |
1/3 cup fresh lemon juice 2 tsp. gelatine A good quantity of ripe strawberries 1 pkt. strawberry jelly mix

Method: 1. Finely crush biscuits and place in a bowl. Add melted butter and mix well. Press on to base and sides of a well-greased 20cm diameter 6.5cm deep spring form pan. Chill 1 hour. 2. Warm cream cheese a little, then beat until soft and smooth. 3. Dissovle gelatine in 1 tbs. hot water, then add to cheese with condensed milk, and lemon. Mix until smooth. 4. Arrange sliced strawberries around base of crumb crust. Carefully pour filling into crust over strawberries. Chill overnight. 5. If desired top with jelly glaze. Make up strawberry jelly as directed on pack. Allow to cool and spoon evenly over top of chilled cheesecake. Decorate with strawberries dipped in jelly and chill until set. |
